Chef de Partie - The Old Spot, Dublin 4
Location: The Old Spot, 14 Bath Avenue, Dublin 4, D04 Y726
Job Type: Full-Time, Permanent
Salary: Competitive, DOE (Depending on Experience)
About Us
The Old Spot is one of Dublin's most celebrated gastropubs - and one of only two gastropubs in Ireland to be recommended continuously by the MICHELIN Eating Out in Pubs Guide every year since 2016. Located on Bath Avenue in Dublin 4, just beside the Aviva Stadium, we are known for exceptional seasonal food built on quality Irish produce, a world-class Sunday Roast, and some of the warmest hospitality in the city. Part of the Loyola Group, we serve two characterful dining rooms and a busy bar - and on international match days, ours is one of the buzziest kitchens in Dublin.
The Role
We are looking for a passionate and ambitious Chef de Partie to join our kitchen team. Working under our Head Chef - an alumnus of some of Dublin's most respected fine-dining kitchens - you will take ownership of your own section in a busy, quality-focused kitchen where seasonal menus, precision, and consistency are everything. This is a fantastic opportunity for a Chef de Partie, or a strong Commis Chef ready to step up, to learn and grow in a MICHELIN Guide-recognised kitchen with real prospects for progression.
Key Responsibilities
Run your own section during prep and service to a consistently high standard
Prepare, cook, and present dishes to spec, with real attention to quality and detail
Support other sections and work closely with the wider kitchen team to deliver smooth, timely services, including high-volume match days and our renowned Sunday Roast
Assist with stock rotation, ordering, and minimising waste on your section
Ensure full compliance with HACCP, food safety, and hygiene standards at all times
Support and help train Commis Chefs and kitchen porters
Maintain a safe, clean, and organised working environment
What We Are Looking For
Previous experience as a Chef de Partie, or a strong Commis Chef ready for the next step, in a quality gastropub, restaurant, or hotel kitchen
A genuine passion for food, with good fresh-food cooking skills and attention to detail
Ability to run a section and stay calm under pressure in a busy service
Good working knowledge of HACCP and food safety practices
A reliable team player with a positive attitude and a willingness to learn
Full right to work in Ireland
What We Offer
Competitive salary, depending on experience
Full-time, permanent role with a stable weekly schedule
The chance to cook in a MICHELIN Guide-recognised kitchen and learn from a Head Chef with a fine-dining pedigree
Meals on duty
Training and genuine career progression opportunities across the Loyola Group's venues in Ireland and Portugal
A supportive, professional kitchen with a real focus on quality and consistency
