The Mespil Hotel has an exciting opportunity for a Commis Chef to join our Kitchen team.
The main responsibilities of this role is to support the kitchen team in delivering high-quality food by assisting in the preparation, cooking, and presentation of dishes while maintaining hygiene, safety, and operational standards.
This is a challenging position for a highly motivated, hardworking individual interested in developing themselves in the hospitality industry. Areas of responsibility will focus on the following areas:
Kitchen Operations:

Assist in the preparation and cooking of menu items under the guidance of senior chefs
- Maintain high standards of food hygiene and follow HACCP procedures
- Ensure all food is prepared, stored, and labeled correctly
- Support the kitchen team during service to ensure smooth operations
- Keep workstations clean, organised, and well-stocked at all times
- Assist with goods receiving and storage, ensuring stock rotation (FIFO)
- Follow recipes and portion control guidelines to maintain consistency
- Contribute to minimising food waste and controlling costs
- Comply with all health & safety regulations

Assist with stock control, ordering, and inventory management
- Minimise waste and ensure efficient use of ingredients

Work efficiently in a fast-paced environment
- Maintain a professional appearance and attitude
- Be flexible with working hours, including weekends and holidays
- Adhere to all company policies and procedures

Previous experience in a kitchen environment (placement or entry-level role desirable)
- Basic knowledge of food preparation and cooking techniques
- Understanding of food safety and hygiene standards
- Ability to work in a fast-paced environment
- Strong teamwork and communication skills
- Willingness to learn and develop culinary skills
- Flexibility to work shifts, including evenings and weekends
