Full job description

The Mespil Hotel has an exciting opportunity for a Commis Chef to join our Kitchen team.

The main responsibilities of this role is to support the kitchen team in delivering high-quality food by assisting in the preparation, cooking, and presentation of dishes while maintaining hygiene, safety, and operational standards.

This is a challenging position for a highly motivated, hardworking individual interested in developing themselves in the hospitality industry. Areas of responsibility will focus on the following areas:

Kitchen Operations:

Assist in the preparation and cooking of menu items under the guidance of senior chefs
Maintain high standards of food hygiene and follow HACCP procedures
Ensure all food is prepared, stored, and labeled correctly
Support the kitchen team during service to ensure smooth operations
Keep workstations clean, organised, and well-stocked at all times
Assist with goods receiving and storage, ensuring stock rotation (FIFO)
Follow recipes and portion control guidelines to maintain consistency
Contribute to minimising food waste and controlling costs
Comply with all health & safety regulations

Stock Control

Assist with stock control, ordering, and inventory management
Minimise waste and ensure efficient use of ingredients

General Duties

Work efficiently in a fast-paced environment
Maintain a professional appearance and attitude
Be flexible with working hours, including weekends and holidays
Adhere to all company policies and procedures

Skills & Experience Required

Previous experience in a kitchen environment (placement or entry-level role desirable)
Basic knowledge of food preparation and cooking techniques
Understanding of food safety and hygiene standards
Ability to work in a fast-paced environment
Strong teamwork and communication skills
Willingness to learn and develop culinary skills
Flexibility to work shifts, including evenings and weekends

Reliable and punctual

Qualifications

Culinary qualification (desirable but not essential)
Food Safety/HACCP training (preferred)
