Bar Manager
Role Overview
As Head Bartender at Haddington House Hotel, you will lead and inspire our bar team, delivering an exceptional drinks experience across our Parlour Bar, Oliveto Bar and seasonal Garden Bar. This is a hands-on leadership role for a hospitality professional who combines a passion for guest experience with strong commercial awareness, attention to detail and a commitment to service excellence.
You will be responsible for maintaining the highest standards of beverage service, supporting the development of our drinks offering, and ensuring every guest interaction reflects the warm, personal and distinctive hospitality for which Haddington House Hotel is known.

Key Responsibilities
- Deliver consistently exceptional service standards across all bar operations.
- Champion the Haddington House Hotel brand by creating memorable guest experiences and maintaining a welcoming atmosphere.
- Support revenue growth through effective beverage sales, premium product recommendations and service excellence.
- Manage stock control procedures, minimise waste, oversee line management and contribute to achieving departmental gross profit targets.
- Participate in seasonal beverage menu planning and development, ensuring our offering remains fresh, relevant and reflective of guest preferences.
- Work closely with our Mixologist on cocktail development and innovation.
- Support the recruitment, induction, training and ongoing development of bar team members.
- Ensure all bar areas, preparation stations and garnish displays are maintained to the highest standards throughout service.
- Maintain compliance with all licensing regulations, health and safety procedures and responsible service of alcohol guidelines.
- Lead by example, demonstrating professionalism, reliability, positivity and a strong work ethic at all times.
- Maintain exceptional attention to detail in all aspects of service, presentation and operational execution.

Job Requirements
Located in Haddington House in Dún Laoghaire
Scheduled week is Mon-Sun but roster format is designed to allow for two days off in a row (unless operational issues dictate a change)
Six month probation period
