What the role is:
The Head of Food & Beverage is responsible for the strategic direction, commercial performance, operational excellence and people leadership of the complete Food & Beverage operation at Castleknock Hotel. The role provides clear leadership across Restaurants, Bars, In Room Dining, Conference & Banqueting Operations and all associated guest service areas, ensuring a consistent, high quality experience while delivering revenue, profitability, cost control and brand standards.
Working closely with the General Manager, Hotel Manager and Executive Head Chef, the Head of Food & Beverage owns the overall F&B strategy and ensures that it is translated into practical daily execution by the F&B and C&B management teams.
The position requires a highly visible leadership presence, strong commercial judgement and a disciplined approach to standards, controls, team development and guest satisfaction.
KEY MEASURES OF SUCCESS
Achievement of F&B revenue, profitability, payroll and budget targets.
Growth in average spend and commercially sustainable outlet performance.
Strong food and beverage gross profit and effective stock, waste and operating cost control.
High levels of guest satisfaction, review scores and complaint resolution.
Consistent service, product, cleanliness and brand standards across all F&B areas.
Strong employee engagement, retention, training compliance and internal succession.
Successful delivery of weddings, conferences, banqueting and high-profile events.
Full compliance with food safety, health and safety, licensing and company controls.
Effective delivery of agreed F&B strategy, projects and improvement plans.
What we would like our applicants to bring to the team:
Proven senior Food & Beverage leadership experience within a high volume, full service four or five star hotel or comparable hospitality environment.
Strong commercial and financial capability, with experience managing budgets, forecasts, payroll, gross profit, stock and departmental KPIs.
Demonstrated leadership across multiple F&B outlets and significant conference, banqueting, wedding or event operations.
Strong knowledge of food and beverage service, restaurant and bar operations, food safety, HACCP, allergen management and alcohol licensing requirements.
Excellent leadership, communication and decision-making skills, with the ability to coach and mentor managers and hold teams accountable fairly and consistently.
Strong guest focus and the ability to manage complex service recovery situations professionally.
Confident user of hotel, POS, reservations, HR and Microsoft Office systems.
Flexible and operationally visible, with availability aligned to the demands of a seven day hotel business.
