ChaTea Desserts & Tea Bar is a premium takeaway dessert and tea concept opening at Colbert Station, Limerick, Ireland.
We specialize in handcrafted desserts, premium loose-leaf teas, bubble tea, viennoiserie, and Asian-inspired bakery products made fresh daily.
The role we are seeking is an experienced Specialty Baker to lead the production of our Asian breads and laminated pastries while maintaining the highest standards of quality, food safety, and consistency.
Key Responsibilities:
- Prepare and bake a range of Asian breads, including Japanese milk bread, soft buns, and specialty Filipino bakery products like Torta Cebuana (fermented coconut sweet sponge), Pan de Sal (Filipino dinner roll), ensaymada (Filipino brioche), and siakoy (Filipino twisted chewy donut).
- Produce viennoiserie including Matcha croissants, Ube Danish pastries, and laminated dough products.
- Prepare doughs, fillings, glazes, and bakery components from scratch.
- Monitor proofing, baking, and cooling processes to ensure consistent quality.
- Maintain strict HACCP and food safety standards.
- Manage ingredient stock and minimize production waste.
- Assist with new product development and seasonal bakery items.
- Maintain a clean, organized, and efficient bakery production area.
Essential Requirements:
- Minimum of 5 years' professional bakery experience.
- Strong experience producing Asian breads and laminated pastry products.
- Excellent knowledge of dough fermentation, proofing, and baking techniques.
- Ability to work independently in a fast-paced production environment.
- Good understanding of HACCP and food safety procedures.
- Strong attention to detail and commitment to product consistency.
- Reliable, organized, and capable of early morning starts.
- Desirable Experience in artisan bakery production.
- Experience training junior bakery staff.
- Food Safety/HACCP certification.
- Must be eligible to work in Ireland with an Irish passport.
