Job Summary:
We are seeking a skilled and passionate Croissant Baker to prepare high-quality laminated pastries, with a primary focus on croissants. The ideal candidate has experience in dough lamination, proofing, baking, and maintaining consistent product quality while working efficiently in a fast-paced bakery environment.
Key Responsibilities:
- Prepare, mix, and laminate croissant dough according to established recipes and standards.
- Shape, proof, and bake croissants and other laminated pastries.
- Monitor fermentation, proofing, and baking times to ensure consistent quality.
- Maintain high standards of presentation, texture, and flavor.
- Ensure all products are prepared fresh and on schedule.
- Operate and maintain bakery equipment safely and efficiently.
- Follow food safety, hygiene, and sanitation regulations at all times.
- Monitor ingredient inventory and report shortages or quality concerns.
- Minimize waste through careful production planning and proper handling of ingredients.
- Keep the bakery clean, organized, and compliant with health and safety standards.
- Collaborate with the bakery team to meet daily production targets and customer demand.
Qualifications:
- Previous experience as a croissant baker, pastry baker, or in a similar bakery role.
- Strong understanding of laminated dough production and butter lamination techniques.
- Knowledge of fermentation, proofing, and baking processes.
- Ability to work early morning, overnight, weekends, and holidays as required.
- Physical ability to stand for extended periods, lift up to 25 kg (55 lbs), and work in a warm bakery environment.
- Attention to detail and commitment to producing consistently high-quality products.
- Strong teamwork and time management skills.
Preferred Qualifications:
- Formal culinary or pastry training.
- Experience producing a variety of viennoiserie, including pain au chocolat, Danish pastries, and brioche.
- Knowledge of artisan baking methods and quality control practices.
