Sheridans Cheesemongers is one of Ireland's best-known artisan food businesses, renowned for exceptional farmhouse cheeses, artisan produce and outstanding customer service.
We are looking for an experienced, commercially minded and hands-on General Manager to lead one of our flagship locations. This unique destination combines a specialist cheese shop, cafe, wine bar and a thriving Saturday morning artisan market, creating a vibrant hub for food lovers and the local community.
This is a senior leadership role for someone who enjoys building successful teams, delivering exceptional customer experiences and driving commercial performance while leading from the front.
The Role
As General Manager, you will have overall responsibility for the successful operation and commercial performance of the site. You will oversee every aspect of the retail shop, cafe, wine bar and our popular Saturday artisan market, ensuring each area operates to the highest standards.
This is a genuinely hands-on leadership role. You will not be managing from an office, you will be working alongside your team on the shop floor, in the cafe and in the wine bar, leading by example every day. You'll be actively involved in the day-to-day operation while ensuring excellent customer service, operational standards and team performance across every area of the business.
We are looking for someone who can bring structure, accountability and continuous improvement to the operation by introducing best practices, clear procedures and consistent ways of working that help both the team and the business succeed.
Beyond the day-to-day management of the business, we are looking for someone with the vision and drive to identify and develop new opportunities. Whether through events, food experiences, partnerships, seasonal initiatives or new uses for the space, you will play a key role in shaping the future growth of the business.
As this is a retail and hospitality business, flexibility is essential. The role includes regular weekend work, evening shifts to support the wine bar, and occasional public holiday working.
Key Responsibilities

Lead the day-to-day operation of the retail shop, cafe and wine bar.

Be an active member of the team, working on the shop floor and supporting all departments as required.

Manage the planning and delivery of our busy Saturday artisan market.

Recruit, coach, motivate and develop a high-performing team.

Introduce and implement operational best practices, systems and procedures that improve consistency, efficiency and customer experience.

Drive a culture of accountability, teamwork and continuous improvement.

Deliver agreed commercial KPIs across sales, gross margin, labour costs, stock control and overall profitability.

Monitor business performance and take action to achieve sales and financial targets.

Oversee stock management, merchandising, purchasing and inventory control.

Create exceptional customer experiences that reflect the Sheridans brand and values.

Ensure the highest standards of food safety, HACCP and health & safety.

Develop new business opportunities, events and initiatives that maximise the potential of the site throughout the year.

Work closely with the Directors to implement business plans and identify opportunities for continued growth.
About You
We're looking for someone who is as commercially driven as they are passionate about people, food and hospitality.
You will have:

Significant management experience in premium retail, hospitality or food service.

Experience managing multiple departments or business streams.

A proven ability to grow sales and improve business performance.

Experience delivering commercial KPIs including sales, gross margin, labour costs and profitability.
