Role Purpose
The Breakfast Supervisor is responsible for the smooth, efficient and welcoming running of breakfast service in The Harvest Room each day, leading the breakfast team to deliver a high standard of guest experience consistent with Dunbrody's reputation as a luxury country house hotel. The role combines hands-on floor supervision with responsibility for staff, stock, hygiene and guest satisfaction during the breakfast period.
Key Responsibilities
- Oversee and actively participate in the set-up, service and breakdown of breakfast in The Harvest Room, ensuring the room is presented to a consistently high standard.
- Lead, supervise and motivate breakfast team members, allocating tasks and stations, and ensuring team members follow correct service standards and sequence of service.
- Welcome and seat guests, manage table allocations, and ensure a warm, personal and attentive guest experience throughout breakfast service.
- Liaise with the kitchen team to ensure timely delivery of hot dishes and to communicate any guest requests, dietary requirements or allergen information.
- Ensure dining time preferences and any special requests noted at reservation stage are actioned and communicated to the team ahead of service.
- Handle guest queries, special requests and any complaints during breakfast promptly and professionally, escalating to the F&B Manager or Duty Manager where necessary.
- Ensure full compliance with HACCP, food safety and allergen labelling requirements at the breakfast buffet and throughout service.
- Monitor and maintain stock levels for breakfast, including ordering and stock rotation, and minimise waste.
- Carry out opening and closing checklists, including cash/float procedures where applicable, and report any equipment or maintenance issues.
- Support the training and induction of new breakfast team members, and contribute to ongoing team development.
- Complete rotas, holiday requests and time and attendance records for the breakfast team in line with hotel procedures, in conjunction with the F&B Manager.
- Support wider Food & Beverage operations as required, including cover for other F&B areas during quieter periods.
- Uphold Dunbrody's brand standards, grooming standards and guest service ethos at all times.
Skills & Experience Required
- Previous supervisory experience in a food and beverage or breakfast service environment, ideally within a hotel or country house setting.
- Excellent guest service skills with a warm, professional and attentive manner.
- Strong leadership skills with the ability to motivate and guide a small team under time pressure.
- Good working knowledge of food safety, HACCP and allergen requirements.
- Well organised, with strong attention to detail and the ability to multi-task during a busy service.
- Flexible and reliable, with the ability to work early mornings, weekends and public holidays.
- Good communication skills, both with guests and across kitchen and front office teams.
